This recipe is supplied by Flavour Gateway, which runs a restaurant in Weavers Field, Bethnal Green. The café serves up a selection of meals as well as cakes, including this delicious brownie, and light snacks. Deluxe brownies – serves 12 Ingredients 100 grams chopped milk chocolate 175 grams unsalted butter 250 grams caster sugar 130 grams plain flour 1 tsp baking powder Method 1. Pre-heat oven to 170ºC. 2. Place the chocolate and butter in a saucepan, put it on top of another pot of boiling water and let it melt. 3. Once butter and chocolate are melted and cooled down, mix in the caster sugar with a wooden spoon. Slightly beat the eggs and add to the mixture. 4. Once the eggs are well incorporated, fold in the flour, 1/2 tsp salt 3 medium free range eggs 100 grams chopped white chocolate 75 grams chopped glacé cherries baking powder and salt. Stir in the white chocolate and glacé cherries. 5. Butter and flour a baking tin approx 8x12 inches across. Pour in the mixture evenly and bake for 35 minutes. 6. Let the brownies completely cool before cutting in 12. Enjoy with a drizzle of double cream. By Melvin Marucot www.flavourgateway.com Trois is a magic number BY GORDON BLUE THIS adjunct to the Les Trois Garçons empire has always been a rather flamboyant shop, but some genius realised that making it a café can turn the place into a showcase whilst pulling in the crowds. Everything you see is pretty much for sale at Maison Trois Garçons, down to the cutlery and crockery. No more standing around in the little shop awkwardly, ready with your “I’m just looking thanks” protective phrasing. You can sit down, kick back and peruse at your leisure. The food is pretty impressive too for a café. The hot and cold menu runs throughout the day and everything from eggs to afternoon tea is on offer. We settle on the soup of the day (cauliflower), panini (actually I think it’s proper singular term is panino FYI), risotto and salads. The risotto was fashionably made with pearl barley and was toothsome as well as wholesome, crammed as it was with fresh root vegetables. I won the ‘envious glances’ prize with my panini filled with goat’s cheese, pesto and mixed roasted veg... mmm. The accompanying salad was full and hearty, incorporating beetroot and quinoa (pronounced keenwa). For dessert we had homemade brownies, which were rich and unctuous, washed down with creamy lattes. This is a great spot to while away a Sunday whilst those around you lose their heads in the Brick Lane Maison Trois Garçons is a high camp setting for delicious food chaos. You can also relax in the smugness that this feels like the place to be and it’s impossible not to feel a tiny bit glamorous in such a high camp setting. The most impressive part of this whole setup is the décor, which of course you can buy a part of! Balloon lights, neon signs, handbags in side cabinets and cut glass finery is all mesmerising in its splendour. I challenge you to find a shop/café quite like it. Be warned, it’s very busy – and deservedly so. You might want to get there in good time for lunch to guarantee a spot. Three had a wonderful lunch including coffees and desserts for £45. If you like the three boys’ style and want to explore their other ventures then Les Trois Garçons restaurant is a sight to behold and Lounge Lover is the height of cocktail glamour, all round the corner from each other in our fair borough.
