It’s an easy way to whip up a light, refreshing dessert that combines sweet syrup with sharp fruit and spices in just 20 minutes. You could vary this dessert by alternating with different seasonal fruit. Provides one of your FIVE A DAY. Light rhubarb syllabub – serves 1 Ingredients 2 sticks of rhubarb Juice of half an orange Half a tsp of ground ginger 1 rounded tbsp of icing sugar Method 1.Wash, top and tail the rhubarb and chop into 1cm pieces. Place in a thick-based saucepan and add the orange juice, ground ginger and icing sugar. 2. Bring to the boil and gently simmer until the rhubarb softens but still holds its shape. 3. Reserve two pieces of the rhubarb and a little juice, and 2 tbsps of low-fat crème fraiche 150g pot of fat-free Greek yoghurt 1 dspn of golden syrup spoon the rest of the mixture into the bottom of serving bowls and chill. 4. In another bowl, blend the low-fat crème fraiche, fat-free Greek yoghurt and golden syrup. Spoon the syllabub mixture over the chilled rhubarb, top with the rest of the rhubarb and juice, and serve. www.wcrf-uk.org What an experience! BY GORDON BLUE IF it’s a celebration or special treat you’re after, a new eatery in Shoreditch could be the one for you. Lyle’s makes a good first impression with the free supply of sparkling water and sourdough bread, but the floorshow just gets better as the lunch unfolds. We work our way through a modest selection of five small plates and two puddings. Try not to nod off but I’m going to go through in detail with the same exquisite execution that they were made and served. Leeks with turbot roe and hazelnuts – just the most perfect al dente leeks served with a heavenly turbot roe mousse and shavings of hazelnut. It left me agog. Cured sea trout was colourful and bright, the salty flavour offset by a slab of cooked beetroot atop damson jelly. Unspeakably good. The asparagus and walnuts: I can only imagine an army of chefs standing over boiling pots with a stopwatch to create this texture and taste. Peas and Ticklemore cheese are a little better than you might imagine. Just on the Lyle’s offers something really memorable right side of crunchy peas, with shavings of titillating Ticklemore and decorated with nasturtium flowers. Salad leaves were simply dressed with apple juice, vinegar and oil and gave our tastebuds a comforting rest. The denouement: puddings. Treacle tart and milk ice cream. Speechlessly good treacle tart with a sugary depth of darkness I’m only saved from by a lemon zest top-note. The milk ice cream? I could do with something a bit more special but the gauntlet has not only been laid down but pretty much rebounded with the pressure of what’s gone before. Gooseberries, yogurt and elderflower meringue: my dining partner pronounced the best dessert she’s ever had. Not only were there shards of crisp meringue askew the gooseberries, but a perfectly poached soft meringue underneath (if you love ile flottante then this could drive you to insanity). Surroundings are just the right side of clinical and we wondered what it would be like at night or in the winter. They’ll need to watch the warmth and cosy factor in an environment that has more than a touch of OCD. The wine list had me panting and regretting it was lunchtime and that we both have to earn a living. At just over £50, including drinks and services, this was not a cheap lunch.
