THIS dish was invented because I wanted to find a vegetarian replacement for the meaty bits used in nachos. I use red kidney beans in this particular version. However, you can substitute tinned cannelloni beans or green flageolet beans. The herbs I use here can be changed to suit the way you use the pâté. When I am using it in nachos, I make a fairly peppery version, sometimes adding smoked paprika If I want to use it as a pâté to spread on toast, I make a more herby flavouring The pâté is quick, easy and cheap – it it also very healthy. Most of all, it is delicious. Bean pâté – serves 4 as well. Ingredients 1 tin red kidney beans 1 medium onion Scarborough Fair herb mix – chopped parsley, sage, Method 1. Dice the onion, finely sprinkle with pepper and half the salt. 2. Cover the bottom of a frying pan with water, half a centimetre deep and bring to the boil. Add the onions and let them cook for a few minutes. Add half of your Scarborough Fair herb mix and stir. 3. Allow to cook until the onions are transparent. Drain and wash the kidney beans and add to the pan. Stir the ingredients while cooking. Add the remaining herbs. rosemary and thyme Quarter tsp salt White pepper 1 tsp olive oil Water 4. As the water evaporates, add a little more so the mixture does not burn. You may have to add water several times. The beans are cooked when easy to squash. 5. Add the last of the salt. Remove from the heat when there is very little water left in the pan. Add the olive oil. 6. Use a wand blender or a potato masher make into a pâté. 7. Use warm for nachos, or allow to cool in ramekins for use as a pâté. Frankly this place had me at ‘hello’ from the munificent cocktail waiter who leads us to our table to the hushed ambience and polished service. One Canada Square restaurant is smart with a capital S. All the sparkling chrome and subdued lighting has me excited before we even see the menus. It’s a mashup between Art Deco design and Gecko’s Wall Street apartment. I nearly camped out in the bathroom it was so gorgeous, leaving me with terrible tile envy. It’s a great, tempting, smorgasbord of a menu, ricocheting from Great British to Thai inspired dishes that leave our mouths watering. Bread and home-churned butter was a lovely starting touch and I managed to plough through it with some decorum, only because I kept on being distracted by the dangerously close open wine fridge flanking our table. My starter of salted peaches and fennel salad was beauty in the eye of any beholder. I had to sit on my hands to avoid taking a photo. Smugly sitting back thinking I’d won hands down, I was brought up short with Umame-tastic tuck on offer at One Canada Square the silver fox’s brie croquettes. Fried cheese! Anyone who denies loving cheese that’s fried I’d treat with the same suspicion as someone saying they don’t like puppies. My main of smoked haddock and salmon fishcake atop a generous portion of spinach, floated, nay sailed, on a sea of beurre blanc. If I had my way beurre blanc would be on the NHS, preferably IV drip administered. The silver fox’s scallop and prawn burger was umame-tastic, blended with Thai flavours and served alongside a hefty/heavenly portion of French fries. Service was friendly and affable, making us feel welcome and cared for throughout. Two ate two courses each plus sank a bottle of rather wonderful Sauvignon for just over £50 including service. The menu is high end and priced to match, but there are some great deals, including set menus before 7.30pm for £15 for two courses or £20 for three including a glass of wine.
