Serve these delicious savoury muffins as part of a cooked breakfast, or pop some into your lunchbox. This recipe is great for using up any cooked green vegetables such as leeks, broccoli, courgettes and spinach left over from another main meal. Email your offerings to recycling@towerhamlets. gov.uk Leek and broccoli mini muffins – makes 24 mini or 12 regular cakes Ingredients 100g mixed cooked broccoli or leeks 225g self-raising flour Half a tsp salt Half a tsp ground black pepper Method 1. Pre-heat the oven to 200°C (400°F) gas mark 6. 2. Blend the cooked vegetables to a pulp in a food processor. 3. In a bowl, combine the flour, vegetables, seasoning and half the cheese. 4. In a separate bowl, whisk together the milk, egg, mustard and oil and gradually pour this liquid into the dry ingredients. Mix gently and expect 75g grated Cheddar cheese 175ml milk 1 egg 2 tsps English mustard 50ml olive oil there to be some lumps. 5. Lightly grease a tray of 12 muffin moulds or 24 mini moulds and half fill each one with the batter mixture and sprinkle with the remaining cheese. 6. Bake for 20-25 minutes or until each muffin has puffed up. Remove and place on a cooling rack. Serve with grilled bacon rashers, poached eggs and grilled tomatoes. Party platter a must for meat munchers BY GREEDY GANNET A NIGHT out to say goodbye to a retiring colleague turned into a meat fest when we discovered there wasn’t a single vegetarian among us. A visit to Shukran sparked celebrations among the more carnivorous of the group. We opted for a meat platter for six, added to hastily with a platter for two as those with the larger appetites had a panic that there would not be enough. How wrong could they be! The larger of the platters drew gasps of awe as it was put on the table with its accompanying plate of chips and spicy rice. Topped decoratively with a large red chilli and a sprinkling of coriander, it included grilled chicken pieces, house special grilled wings, chicken tikka and chicken shawarma plus barbeque ribs, lamb chops and sheek kebab. The second platter was more of the same selection but smaller quantities. All served piping hot, there proved to be more than enough for everyone and even a doggy bag full for someone’s boyfriend left at home. The meat was well cooked and tasty, with the rice adding an extra touch of spice. Even the ribs had plenty of meat on them and the chops were tender and well-sized. The only greenery in sight was the coriander Don’t forget the doggy bag for Shukran’s meaty leftovers sprinkles and a couple of us commented that some vegetables on the side would have been a sensible addition to the meal but by then our appetites were sated. We passed on the dessert offerings for the same reason although one of the diners chose a milk shake that resembled a sundae and which she said was delicious. The rest of us enjoyed various soft drinks as the restaurant is not licensed, and the helpful waiters kept jugs of tap water filled as they emptied. The www.lovefoodhatewaste.com restaurant is quite new and was very pristine, with simple décor and areas where you could be more private if that was your choice. We had started early and were the first customers inside but it was filling up as we left after a couple of very pleasant hours chatting and meat munching.
