This recipe is supplied by Flavour Gateway, which runs a restaurant in Weavers Field, Bethnal Green. The café serves up a delicious selection of meals as well as cakes and light snacks. And the great thing is, it’s very easy to cook. Baked lemon cheesecake Ingredients 250g cream cheese 250g ricotta 100g quark cheese 20g cornflour 2 egg whites 70g of icing sugar Method 1. Preheat oven to 160°C. Put the digestive biscuits into a freezer bag and crush with a rolling pin until they look like breadcrumbs. 2. Melt the butter into a large bowl and mix in the crushed biscuits until all the crumbs are coated in butter. Pour the mixture into a 20cm spring form cake pan, pressing down with the back of a spoon. Cover with cling film and place in the fridge. 3. In a large bowl put in the ricotta, quark, cream cheese, icing sugar and lemon zest and beat with a handheld Zest of 1 lemon 250g digestive biscuits 75g unsalted butter Equipment Handheld blender 20cm spring form cake pan blender until creamy and thick in appearance. 4. In a separate bowl, beat egg whites until stiff peaks form, then beat in the cornflour. Gradually add the egg white mixture to the large bowl, folding in gently with a metal spoon until combined. 5. Transfer the mixture into the cake pan, tap the bottom of the pan to level out the cream cheese mixture. Bake for 45 minutes or until risen. 6. Remove from the oven and allow to cool before transferring to the fridge. 7. Serve cold. By Wumi Oni Simply sublime seafood The Wright stuff – the ambience, food and wine list are all perfect for a special occasion BY GORDON BLUE MY main dilemma of reviewing a restaurant famed for its seafood is not to crack any shellfish jokes. Wright Brothers has its latest outpost in Spitalfields and doesn’t disappoint my already high expectations. The ambience is classic yet intimate, warmly lit with a sprawling bar where the waiters are already deeply involved in shucking oysters. The menu is assured in its simplicity, fruit de mer offered in the shape of live crabs, lobsters and other crustacean. I was trembling with excitement. We started by sharing a platter of oysters of three different types, all from the UK apart from our Jersey cousins. Served with a simple shallot vinegar, it was a perfect start to what was shaping up to be a sublime meal. For mains I devoured a technically perfect crab omelette (flashback to Cordon Bleu training where I had to make 26 in a row and was still shouted at in French for not getting the colour right – here they did it with none of the fuss I displayed). A deeply satisfying crab bisque was served alongside a nd had me rolling my eyes in ecstasy. My dining partner plumped for hake with fried potatoes and a punchy harissa – again faultless. So what of the pudding? Chocolate and caramel pot – words can hardly describe how heavenly this small pot of sweet ambrosia was. The chocolate was dense and sat atop a creamy caramel goo which had just the right level of salty bite to offset the sweetness. The wine list equalled the rest of the service and food – unfussy but spot-on, with a good mix of prices, range and class. We settled for an oaky and complex chardonnay, which complimented the freshness of the food. Criticisms? This joint is a treat and perfect for a special occasion and I guess I’d like a few more oysters for my bucks, but the range of choice is scaled well enough that you can decide how much you’re going to indulge. Quality over quantity rules and I was tempted to fight for more than my fair share of the crustacea but I was probably being a bit shellfish. Shucks, I broke my own rule. Two indulged in starters, mains and a gorgeous bottle of wine for just under £70, not including service. If you love shellfish you won’t be disappointed.
