The recipes are delicious and easy to prepare. Trigger really likes this dish as it contains a good balance of the essential nutrients in just one dish. The protein source is vegetable mince which is low in saturated fats – that can only be good for your heart. You can experiment with any vegetablesthat you like but we have used roasted peppers, courgettes and aubergines. This is a great dish to involve all the family in preparing, cooking and serving. Vegetable enchiladas – serves 6 Ingredients 6 x 6in tortilla wraps 150g vegetables of your choice 200g vegetable mince Tin of gungo beans One red onion, chopped Method 1. Dice the vegetables into one inch cubes and roast in a hot oven, with a little oil, for 40 minutes. 2. Fry the onions until soft and add the gungo beans, roasted vegetables, vegetarian mince, and seasonings. Cook for 15 2tbs tomato purée 80g grated Cheddar Half tsp chilli powder 1 tsp garlic powder Half tsp coriander Half tbs rapeseed oil minutes, stirring regularly. 3. Stir in tomato paste. 4. Lay the tortillas on a work surface and divide the filling equally. Roll up and place on a baking dish. 5. Top with grated cheese and bake in the oven for 10 minutes, gas mark 4/180ºC. www.myschoollunch.co.uk/towerhamlets Go up west, out east Blu with a view serves up riverside teatime treat BY HARTY HARRIET THERE’S nothing more wonderful than an afternoon full of tea and cakes, especially when it’s inspired by the Mad Hatter’s tea party. I’ve always travelled into central London for afternoons like this so when I discovered that the Radisson Edwardian Blu New Providence Wharf hosted an afternoon tea, being a local girl, I had to go and try it out for myself! We went as a group of six to Scoff and Banter, to celebrate a birthday. As soon as we arrived we were greeted by name and taken through to the conservatory where we were seated at our table. This was beautifully decorated with pretty china cups and saucers and all of the tables in the conservatory boast a great view of the Thames and the O2 arena. It was picturesque in the afternoon winter sun. We were first offered a variety of teas, some of which were quite unusual such as the jasmine flowering tea. Not the most flavoursome but definitely the prettiest. Then came the tiers of finger sandwiches, scones with clotted cream and jam, jellies, tarts and other sweet treats. We tried everything on offer and there was something for everyone. The service was impeccable. Someone was always at hand to make sure we had enough tea. The staff on the day made a huge fuss over the birthday girl as well, The Radisson Edwardian Blu is picturesque in the afternoon sun bringing out a birthday tart for her with a candle in, whilst singing Happy Birthday. The only negative I had about the day was that our request for extra vegetarian sandwiches was missed and we had to ask again once the food had been served. As soon as we brought up this problem, however, we were given a whole plate of extra vegetarian fare. The afternoon was perfect and we all left feeling very full and spoilt. For £19.50 per person, it’s a value for money experience that feels like a central London day out. I would highly recommend it.
